Crispy frying powder: 50 grams (about 5 tablespoons)
Cooking oil: 1/2 cup (rice cup)

Choosing Fresh Ingredients:

Selecting Fresh Shrimp:
Choose shrimp with intact shell joints on the body, a transparent shell, and a slight sea aroma.
Opt for shrimp where the head and body are firmly attached.
Avoid purchasing shrimp that appear slimy or have uneven, dark colors.

Choosing Quality Potatoes:
Look for potatoes with a smooth, yellow skin, free from black spots and deep cracks.
Select potatoes that feel firm and heavy when held.
Avoid buying potatoes with signs of rot, excessive moisture, or sprouting. Avoid potatoes with greenish skin, as they can be harmful.

How to prepare crispy fried Potato Wrapped PTO Shrimp

1. Prepare shrimp
When purchasing shrimp, you peel off the shell, cut off the shrimp head and leave the shrimp tail.
Then, you make a small incision on the shrimp body to remove the black thread.
Wash the peeled shrimp, drain and marinate with a little pepper for about 5 minutes.

How to quickly remove shrimp back thread:

  • First, you turn the shrimp over, hold the shrimp body with one hand, and peel off both sides of the shrimp head with the other hand.
  • Next, hold firmly the part connecting the head and body of the shrimp, then slowly separate the head from the body of the shrimp. Thus, the shrimp thread stuck to the feces at the shrimp head will also be pulled out.

Wash the peeled shrimp, drain and marinate with a little pepper for about 5 minutes.

2. Processing potatoes

Prepare a bowl and fill it with water to cover 1/2, then add 1 teaspoon of salt and stir well.

Peel the potatoes and place them in the salt water mixture.

Meanwhile, cut the potatoes into thin slices about 1/4 knuckle thick. Next, cut the potato fibers in a circular shape from the outside to the inside to get thin, small potato fibers as shown.

Continue soaking the potatoes for 15 – 30 minutes in diluted salt water.

How to peel potatoes without turning them black:

To keep the potatoes from turning black, immediately put the potatoes in salted water as soon as you finish peeling them.
You can also soak potatoes after peeling in cold water mixed with a little vinegar. This method also significantly limits the formation of dark spots.
For brown potatoes, you can boil them with a little fresh milk. This method can remove the dark spots that have formed and give the potatoes a milky aroma.

3. Mix the flour

Put into a bowl 5 tablespoons of crispy fried flour and add about 50ml of filtered water (about 5 tablespoons).

Next, stir well until the powder is completely dissolved until the powder mixture has a moderate consistency, neither too thick nor too liquid.

4. Wrap potatoes around shrimp

Dip the shrimp into the crispy fried dough, take out the shredded potato in the bowl of diluted salt water and wrap it around the marinated shrimp until it’s gone.

5. Fried shrimp
Put the pan on the stove and add 1/2 cup of cooking oil to the pan and heat over medium heat. When the oil boils, drop each shrimp in to fry. You fry until the shrimp is cooked and the potatoes are golden and crispy, about 7 minutes, then remove the shrimp to a plate and decorate as you like and you’re done.

How to fry shrimp crispy and delicious without splashing oil:

Wash the ginger root and dry it. Then, cut a thin slice and put the ginger in the hot pan, then use chopsticks to gently press and rub the ginger all over the bottom of the pan.
You do this for about 2 – 3 minutes, then take out the ginger slice and add oil to fry normally.
